Not As I Imagined


I've been meaning to use the over ripen bananas in my fridge, hence I'm making this not-so-sweet cupcakes with a secret center! Indulge... ^_^




Banana Cupcakes with Chocolate Center:
  • 1 1/4 cups all purpose flour
  • 1/2 Tbsp baking soda
  • 1 pinch salt
  • 1/4 cup unsalted butter
  • 1/2 cup white sugar
  • 1/4 brown sugar
  • 1 egg
  • 2 very ripe bananas, mashed
  • 1/3 cup buttermilk 
  • 12 pieces of dark chocolate pastilles
  1. Pre-heat oven to 175 C ( 350 F )
  2. Sift together : Flour + Baking soda + Salt in a medium bowl
  3. Cream butter together with sugar until creamy
  4. Add egg, then the mashed bananas
  5. Add in flour mixture alternating with buttermilk in 3 additions. Mix well
  6. Put 12 cupcake liners in muffin tin. In each cup, put 2 tablespoon of batter. Place 1 chocolate disk on the batter, then cover with another 1 tablespoon of batter
  7. Bake in 175 C, preheated oven for about 12-15 minutes or until the top has slightly brown
  8. Remove from oven and immediately cool on wire rack. Frost if you desired
