Taste Buds : Rosemary & Basil Foccacia


I've already put on a recipe of foccacia before. But that's a little different from this one. Today, we're going to venture into new territory. I think I managed to squeezed in basil and rosemary in most of the breads I baked. So no different from this one.

Foccacia, is one of Italian flat bread. Usually topped with herbs, but that doesn't mean it is limited to any other toppings. You can try sliced olives or tomato instead. For those who like it hot, maybe pickled chili? I haven't try that...It could be as delicious, just in a different way.



This foccacia is soft and chewy, best eaten immediately for it will harden slightly when exposed to open air. Full of flavor, you should savor the taste while you're munching on it! Seriously speaking, the herbs' aroma will tease your nose as the flavors tease your tongue!

Can't-Get-Enough Rosemary & Basil Foccacia:
  • 1 cup warm water
  • 1 Tbsp yeast
  • 1 Tbsp white sugar
  • 1/2 Tbsp salt
  • 2 Tbsp butter, softened
  • 2 Tbsp rosemary, dried / fresh
  • Handful of basil, chopped
  • 2 1/4 to 2 1/2 cups of all purpose flour
  1. In a big bowl, combine water, yeast and sugar. Let stand for about 10 minutes or until bubbly. 
  2. In another bowl, combine 2 cups of flour,salt and 1 Tbsp. of rosemary
  3. Add the flour mixture into the liquid along with the softened butter. Mix well, then add additional flour little by little. You don't want a hard dough. The finish dough will be a bit soft and sticky
  4. Rest the dough covered with cling wrap for 1 hour
  5. Floured your work surface, punch air out of the dough and turned it onto the surface. Divide into two. Shaped each into a ball and flattened it with your palm. This is a flat bread by the way ^_^
  6. Place on greased baking sheet, let it rise for another 45 minutes. Meanwhile, heat the oven to 190 degrees Celsius (375 F). Melt one tablespoon of butter and add the remaining tablespoon of rosemary and chopped basil. Brush on the rising dough and sprinkle lightly with salt
  7. Before putting in the oven, make indentions with your finger all over the surface. Pop in the oven and bake for 15-20 minutes, or until lightly brown. Better serve hot!  
See all the herbs sprinkled on top? Gonna make your house smells HEAVENLY for hours...

P/s: I like to eat it as it is. But you can always dip it in your favorite dipping sauce! I'm totally going to post this on YeastspottingBon appetit!  ;-)
