5 Rencah 5 Rasa : Comfort Me


Who doesn't love a simple comfort food? That when you sink your teeth in it, you'll be instantly lifted up by the flavors, so direct and uncomplicated. And what is more potent than a combination of potatoes, cheese and onion? You tell me. ;)


Mashed Potato: 
Inspired by Chef Sherson's 5 Rencah 5 Rasa 

You need: 
  • Potatoes (about 6, large)
  • 1 big Holland Onion 
  • Mozzarella Cheese, grated
  • Salt 
  • Black pepper 
  1. Washed the potatoes thoroughly, leave the skin on and boil in a big pot until tender
  2. Once done, carefully remove skins and place in a big bowl. Mashed the potatoes, add in grated mozzarella cheese, salt and pepper to taste
  3. Prepare the onion: Peel off the skin and the outer layer. Cut through the middle of the onion until just before the bottom of it
  4. Boil, immersed in water until the onion is softened. Then, take out and carefully peel off layers. Fill in the onion layers with mashed potatoes and arranged them in a baking dish, filled side down
  5. Bake at 220 C for 5 minutes till the onions look golden and slightly brown
