Anticipating Ramadhan



Good morning! Thought I post something new before the coming of Ramadhan. Muslims all over the world will start fasting *Yeay!*. Where some thought that Ramadhan is basically a month to held oneself from eating during the day, it is actually more than that.

You might love it or hate it. It smells heavenly while baking, not too moist as the cake version and slightly dense. Plus, it has this crusty top that I can't help peeling off and munch once I took it out of the oven! *Notice the missing part? Well...you know the baker have to taste-prove before serving right? Right?! Hehehe*


Banana Bread 
Makes 1 loaf


Wet ingredients:
  • 4 - 5 ripen bananas 
  • 2 large eggs
  • 1/2 cup brown sugar
  • 1/3 cup corn oil
  • 1/3 cup low fat coconut milk
  • 1 tsp vanilla
Dry ingredients:
  • 2 cups all purpose flour
  • 1/2 tsp baking soda 
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup chocolate chips
  1. Preheat oven to 180'Celsius and grease a 5"x7.5"x1.5" loaf pan
  2. Mash bananas in a small bowl with a squeeze of lime, then set aside
  3. In another bowl, whisk eggs until frothy then add brown sugar + corn oil + coconut milk + vanilla
  4. Mix thoroughly. Add the mashed bananas. Add in all of the dry ingredients, folding until there are no big lumps in the batter
  5. Pour the batter in prepared pan, leveling the top
  6. Pop in the oven for about 50 minutes until top is brown and when toothpick inserted in comes out clean

Notes: 
  • If the top brown too quickly, and you don't want a hard crust on your bread; cover the top loosely with aluminum foil once the top has brown nicely
  • Let cool in the pan before slicing
  • The loaf can yield 12 -14 slices depend on the thickness you sliced
