Rainy Day Project


When the weather gets cold and grey, what's best is to stay at home and bake cookies! Nothing so fancy... The baking project is to while away the time, so don't make yourselves sweat over it. The cookies will be simple enough to do and surely delicious for snacking around. Now let get started! 



White Chocolate Dipped Munchies

3 ounce butter, softened
1/2 cup confectioner's sugar
1 tsp vanilla extract, or any other flavor
1 cup all purpose flour
1/2 cup almond meal 
1 egg

3/4 cup white chocolate chips
2 Tbsp butter

  1. Preheat oven to 180 C (350 F) *If your oven heat up quickly, forgo this step. You can preheat it during the chilling time*. Line two baking sheet with greased/parchment paper
  2. Combine butter + confectioner's sugar + vanilla/flavoring in a mixing bowl. Beat until the mixture turns creamy and pale in color. Add the egg and beat again until fully incorporated, about 1 minute or so
  3. Then add both the flour + almond meal. Mix again until forms a smooth dough
  4. Wrap the dough in cling wrap and refrigerate for about 20 minutes. Afterwards, take out the dough and on lightly floured surface, roll out into 0.5 cm in thickness and cut into shapes you like. Space out between the cutout dough an inch or so
  5. Bake in preheated oven, 180 C for 10 - 12 minutes. Depending on the size, give or take 1 minute from baking time suggested. Check on the cookies after 10 minutes, the edge should be slightly golden brown. Cool on wire rack before dipped in chocolate
  6. White chocolate dip: In a double boiler, melt the white chocolate chips + butter. Stir occasionally using heat-proof spatula. After all the chocolate melts, remove from heat. Dip half end of a cookie in the warm chocolate, setting it on the cooling rack to harden. You can sprinkle jimmies on the cookies while the white chocolate still warm
  7. After the chocolate hardens, store the cookies in an air-tight container away from direct sunlight
