More Please!





There're so many ways in making a chocolate cake. If you are in the mood to face every detail instructions, precisely measured ingredients and hours of preparations...You'll probably come out with the softest, lightest chocolate cake ever that could rival a professionally made one. But, if you wanted a last-minute dessert, that could be ready in a shortest time, without the hassle of  making it, plus not compromising the taste of a chocolate cake... You came to the right place. This one here is most likely to fit the bill.



The previous post I made about raya gathering at my house for a few friends of my brother also includes this delectable dessert. It was so soft, very moist and oh so-so-so chocolatey! Yeah, that sound a bit over the top. But truly appropriate to describe the cake. 

As you can see, Food.com has thousands of tried and true recipes that you could lost yourselves into. Found this chocolate cake from the site too! Be sure to read the reviews and comments so you'll get the buzz of a high-rated recipe and probably adding your own. I made the cake late at night and let it cool over the counter overnight *Don't forget to cover it with a kitchen towel before you go to bed!*. 



When the morning came, I sort of decided to serve the cake as it is. Unadorned. Though at the back of my mind I was hoping that I slapped on some buttercream on top, which was why I let a block of butter to soften on the counter. At the very last minute *that's exactly 25 minutes before the guests will arrive*, I hastily prepared making the buttercream. Ten minutes tops, the buttercream was ready. And with what little time I had left, sliced the cake into petite size and frosted them. Luckily, the frosted cake had time to chill before being serve to the guests. 

Now lets proceed to the recipe!


Luscious Chocolate Cake
Adapted from food.com

1 3/4 cups all purpose flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
13 Tbsp cocoa powder
2 cups caster sugar
1 1/2 tsp vanilla
7 Tbsp corn oil
1 cup milk
2 eggs
1 tsp salt
1 cup boiling water

  1. Combine all of the dry ingredients in a large mixing bowl
  2. Make a well in the center, add in the rest of the ingredients except the boiling water
  3. Add boiling water and stir evenly (the batter will be very thin)
  4. Pour in greased and floured baking dish 
  5. Bake in preheated oven, 175 C for 30-35 minutes



Last Minute Buttercream

250g butter *softened*
1/2 cup icing sugar
A pinch of salt
1/2 tsp vanilla extract
2 tsp milk *optional. Add more if desired*

  1. Beat softened butter with electric whisk till fluffy and pale in color
  2. Add the icing sugar + salt + vanilla. Increased speed to high, beat till double in volume
  3. Add milk a teaspoon at a time. Then beat again until stiff
  4. Use on cooled cake
