Starting Point


Good morning! It's Sunday and I'm hype up for no apparent reason. Or...could it be because of what I ate for breakfast?!!


Fluffy Yogurt Pancakes in Pineapple Syrup
Makes 9 fluffy pancakes


1 1/4 cups all purpose flour
1 1/2 Tbsp sugar
1/2 tsp salt
2 tsp baking powder
1/4 tsp bicarbonate soda

1 egg
1/4 cup yogurt
1 1/4 cups water
2 Tbsp corn oil

Pineapple Syrup:
1 cup roughly chopped pineapple
2 Tbsp brown sugar
1/4 cup water


  1. Pancakes: Mix all the dry ingredients in one medium bowl. In another bowl, beat the egg lightly. Add in yogurt + water + corn oil. Mix well before adding into the dry mixture
  2. Using a balloon whisk, quickly combine the wet and dry ingredients. The batter should be slightly thick with air bubble forming in it. Heat a non-stick pan over high heat, scoop 1/3 cup of batter and pour onto the hot pan. Let cook for about 30 seconds, until the bottom slightly browned and air bubble start popping on top. Flip it, cook another 30 seconds and done. Cook the rest of the batter
  3. For the pineapple syrup: Using the same pan, combine pineapple + brown sugar + water. Cook over medium heat until bubbling and the pineapples softening. Turn off heat and pour into a heat resistant bowl. *Caution : Let cool slightly before pour onto pancakes. The hot syrup can burn your tongue!
