I've been meaning to use the over ripen bananas in my fridge, hence I'm making this not-so-sweet cupcakes with a secret center! Indulge... ^_^
Banana Cupcakes with Chocolate Center:
- 1 1/4 cups all purpose flour
- 1/2 Tbsp baking soda
- 1 pinch salt
- 1/4 cup unsalted butter
- 1/2 cup white sugar
- 1/4 brown sugar
- 1 egg
- 2 very ripe bananas, mashed
- 1/3 cup buttermilk
- 12 pieces of dark chocolate pastilles
- Pre-heat oven to 175 C ( 350 F )
- Sift together : Flour + Baking soda + Salt in a medium bowl
- Cream butter together with sugar until creamy
- Add egg, then the mashed bananas
- Add in flour mixture alternating with buttermilk in 3 additions. Mix well
- Put 12 cupcake liners in muffin tin. In each cup, put 2 tablespoon of batter. Place 1 chocolate disk on the batter, then cover with another 1 tablespoon of batter
- Bake in 175 C, preheated oven for about 12-15 minutes or until the top has slightly brown
- Remove from oven and immediately cool on wire rack. Frost if you desired
