the oranges
i never tire of citrus fruits. be it in any form, i'll always be drawn to the tangy fragrant of the fruit. it can be lemon, lime, orange, tangerine and so many more. and what is more appealing than waking up to the smell of orange filling your house in the morning? i'm sure it'll instantly perk you up and bustle about! can you guess what's for breakfast today? no? i'll tell you then. it's orange chocolate chip muffins! this muffin is not overly sweet and perfectly balance with the addition of bittersweet chocolate chip.
what you'll need for the ultimate orange chocolate chip muffins:
*this will make approximately 8 normal size muffin*
1/4 cup vegetable/corn oil
1/3 cup sugar
1 large egg
1 cup self-raising flour
1/3 cup bittersweet chocolate chips
2 tsp zest of orange
1/8 tsp salt
1/4 plain yogurt
2 Tbsp orange juice
1/2 tsp vanilla extract
chopped almond *optional*
- preheat oven 180 C.
- combine all the wet ingredient in one medium bowl
- mix all the dry ingredients in another bowl
- slowly fold flour mixture into the liquid mixture making sure not to over beat
- divide the batter evenly between 8 muffin cups, 3/4 full, sprinkle with chopped almond
- bake for 20-25 minutes *i checked mine after 20 minutes and perfectly done*

sweet indulgence
looks like i've been hit by a muffin bug this week. i kept on posting about muffins. it's okay i guess since muffin is like a best friend. it can be sweet; it can be savory. sometimes a bit tart; another time will be spicy. take your pick. the possibilities are endless. i bet you feel the same way.
so for yesterday tea time, i made strawberry yogurt muffins with raisins.
the verdict (and i'd like to quote Simon's favorite three words in AI) :
it. was. outstanding.
moist, not too crumbly, perfect pair with unsweetened tea...just how a muffin should be.
