English Muffins
From Joe Pastry
- 2 cups of flour
- 2 1/4 tsp instant yeast
- 1 1/3 cups of hot milk
- 1 Tbsp shortening
- 1 Tbsp sugar
- 1 tsp salt
- Mix both flour + yeast in a bowl with a whisk and set aside
- In another bowl, combine the rest of the ingredients and stir till everything has melted. Let the mixture cool slightly
- Add the liquid into the flour mixture, stir everything thoroughly. You should have a wet dough/batter. Then let it sit for 1 hour or till doubled in size
- Now, heat your girdle on a low heat. Melt a teaspoon of butter to grease it.
- Using a tablespoon, scoop one heaping spoonful of the batter and plop it on the girdle. Cook for 5 minutes, flip it with a spatula and cook another 5 minutes
- Transfer the cooked muffins on towel lined plate. Halved the muffins, and enjoy it with butter and jam! I toasted the muffins till crispy then lather with butter and kaya. Yummy! :D
* Usually this muffins were cooked in a ring mold. I don't have it, so I just roughly rounded the batter with spoon
* One heaping spoonful is roughly about 1/3 cup
