Who doesn't love a simple comfort food? That when you sink your teeth in it, you'll be instantly lifted up by the flavors, so direct and uncomplicated. And what is more potent than a combination of potatoes, cheese and onion? You tell me. ;)
Mashed Potato:
Inspired by Chef Sherson's 5 Rencah 5 Rasa
You need:
- Potatoes (about 6, large)
- 1 big Holland Onion
- Mozzarella Cheese, grated
- Salt
- Black pepper
- Washed the potatoes thoroughly, leave the skin on and boil in a big pot until tender
- Once done, carefully remove skins and place in a big bowl. Mashed the potatoes, add in grated mozzarella cheese, salt and pepper to taste
- Prepare the onion: Peel off the skin and the outer layer. Cut through the middle of the onion until just before the bottom of it
- Boil, immersed in water until the onion is softened. Then, take out and carefully peel off layers. Fill in the onion layers with mashed potatoes and arranged them in a baking dish, filled side down
- Bake at 220 C for 5 minutes till the onions look golden and slightly brown
