World Peace Cookies


  • 1 1/4 cups all purpose flour
  • 1/3 cup natural unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 11 Tbsp butter (1/2 cup + 3 Tbsp), room temperature
  • 2/3 cup packed brown sugar
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 5 ounces bittersweet chocolate, chopped to chips sizes

  1. Mix flour + cocoa + baking soda in mixing bowl. Set aside
  2. Beat butter until fluffy. Add in sugar + vanilla + salt. Beat again till fluffy about 2 minutes
  3. Add in flour mixture. Mix until blended. Next, add in the chopped chocolate and mix just till distributed into the dough (dough might be crumbly, but that's fine)
  4. Divide the dough into two. Knead it a few times so the dough comes together if it too crumbly. Then roll each dough into 1 1/2 inches diameter log
  5. Wrap each dough in plastic wrap, individually. Chill for 3 hours, until firm
  6. Preheat oven to 160 C (325 F). Using a very sharp knife, cut the logs into 1/2 inch-thick rounds. Arrange on prepared baking sheet 1 inch apart
  7. Bake for 10-12 minutes, until cookies appear dry. Let set on the baking sheet for one minute, then remove to cool completely on cooling rack. Store in air-tight container



P/s:

* This is easily made ahead and can be keep chilled for 3 days in the fridge. 
** So good that half of the cookies were devoured by my little brother alone! ^__^
